

Astillero is an exceptional wine crafted by Bodegas El Paraguas with the white grape variety legítimo, recognised as the oldest caste in Galicia.
Sourced from the Fonte do Conde vineyard, located between 31 and 56 metres above sea level and composed of granite-based clay soils, this wine captures the essence of the region.
The meticulous winemaking process of Astillero begins with the harvest of selected bunches of grapes in small boxes. Subsequently, a careful berry-by-berry selection of 356 kilograms of harvested grapes is carried out. The vinification process takes place in a 500-litre stainless steel tank, where the grapes macerate with their skins for 7 months, thus obtaining all their character and complexity.
In the visual phase, this wine has an attractive straw yellow colour with subtle greenish iridescence.
In the olfactory phase, the characteristic notes of the legitimate white variety predominate, with floral and stone fruit aromas intertwined with marked saline touches.
On the palate, Astillero is light on the palate, with high acidity and a well-defined Atlantic character. Its freshness is enhanced by the presence of fruit flavours that develop along the way.
