Description

Baynos is a white wine produced by Bodegas Mauro in the D.O.Ca. Rioja with Viura grapes. An exceptional wine that represents the essence of Bodegas Mauro in Baños de Ebro. Made from the Viura grape variety, this wine captivates with its distinctive character and indisputable quality.

The small plots of goblet-grown vines in Baños de Ebro provide the perfect conditions for the Viura grape to grow. The poor chalky clay soil adds a unique complexity to the grapes, conveying their earthy character and balanced expression.

At Bodegas Mauro, the cultivation of Baynos follows organic practices in the process of certification. Biodynamic techniques are applied and animal traction is used, preserving harmony with nature and ensuring an authentic and sustainable wine. Carefully limited yields of 3,500 kg per hectare guarantee the concentration of flavours and aromas in each bottle.

The making of Baynos is an art in itself. Alcoholic fermentation is carried out with indigenous yeasts, adding a unique character to the wine. In addition, 20 months of ageing in French oak barrels gives elegance and smoothness to this exceptional wine. The result is a limited production of only 2,882 bottles, each one of them a jewel for lovers of good wine.

On the nose, Baynos is captivating and aromatic. Its olfactory profile evokes aged whites, revealing complex and mature notes rather than the more youthful and fruity aromas. The aromas unfold in layers, with subtle nuances of ripe white fruits, delicate floral notes and elegant hints of oak.

On the palate, Baynos shows a vibrant vibrancy and surprising purity of flavours. The flavours are clean and sharp, providing a refreshing sensation with every sip. The balance is outstanding, with well-integrated acidity that enhances the flavours and adds structure to the wine. This harmony between acidity and flavours suggests that Baynos has great potential for bottle ageing.
