Description

Carabibas Viña del Carpintero is a red wine produced by Bodegas Sierra de Cabreras in Salina with Monastrell grapes in the D.O.P. Alicante.

Carabibas Viña del Carpintero is made exclusively with Monastrell grapes. The vines used are 40 years old. The vines are located in a chalky-stony and saline sandy-loam soil, situated near the old Salina.

The vineyard benefits from a special microclimate in Salinas, at an altitude of 550 metres. The temperature variation between day and night favours a balanced ripening of the clusters. In addition, the area enjoys a high level of sunshine and moderate annual rainfall.

Careful tillage techniques are applied to guarantee the quality of the grapes. The grapes are harvested by hand in die-cut boxes of less than 15 kg, after which the best bunches are selected by hand.

In the vinification process, the must is transferred to stainless steel tanks by filling and pumping over by gravity, using the OVI installed in the winery. Pumping over is carried out and malolactic fermentation takes place in the barrel. Throughout the process, the temperature is controlled to ensure optimal vinification.

Finally, Carabibas Viña del Carpintero is aged in French oak barrels. This stage of ageing in oak gives the wine a distinctive aromatic balance, highlighting its particular characteristics.

Tasting Note of Carabibas Viña del Carpintero

Colour: The wine has a medium intensity cherry colour.

Aromas: On the nose, notes of sweet spices, mountain herbs, incense, ripe black fruits and candied fruits.

Palate: On the palate, a spicy character and ripe tannins are perceived. Once again, the dark-toned jammy and ripe fruits reappear.
