Château d’Aussières corresponds to a cuvée of excellence, the result of a rigorous selection of the best batches from the vineyard and produced in small quantities. It’s aged 40% in oak barrels for 12 to 16 months. Our teams seek an exceptional density and finesse that allow to express all the richness of a fresh and late terroir that favors the production of these elegant wines.
Weather:
As is customary year after year, the Languedoc region experienced great climatic variations. Thus, while the north was under heavy rainfall at the end of the summer, further south, the Narbonne region saw a total absence of rainfall during the same period. In Aussières, the climate that prevailed during that vintage allowed the grapes to develop in ideal conditions from budding, during flowering and until ripening. The continuity of this auspicious climate resulted in an optimal degree of ripening in all our plots and in turn allowed the fruit to reach its best aromatic expression and an unequaled balance in all the strains, from the early Chardonnay, to the later Mourvèdre and Cabernet Sauvignon.
Château D'Aussières Tasting Notes:
Color: Dark red with violet reflections.
Nose: Still discreet. deep and elegant. Delicate notes of wood are perceived perfectly integrated with aromas of pine and eucalyptus.
Mouth: The wine is powerful, with notes of cherry and chocolate. The contribution of Mourvèdre reveals a pleasant persistence that complements very well with the elegance of the Syrah and the more subtle notes of the Grenache. The finish is elegant and balanced. An almost perfect vintage from a viticultural point of view that can already be enjoyed widely despite its relative youth. It will certainly retain its freshness for a long time.
Aging Potential: This wine has excellent aging potential.
