Description
Observador is a white wine made from Albariño and Godello grapes in the D.O. Rías Baixas by Bodega Davide.
50% Albariño, 50% Godello. A unique blend from Finca Ofelia in Baión, in the heart of the Salnés Valley, where the optimal orientation of the micro-plot favours excellent ripening of the Godello, perfectly complementing the vibrant acidity of the Albariño.
The vineyards sit on poor, granitic soil, with a high drainage capacity, ideal for the cultivation of these varieties that prefer water stress conditions to concentrate their flavours. At Observador, they embrace a philosophy of thoughtful viticulture, where every step in the care of the vineyard is carried out with the utmost respect and understanding of the natural environment and the plants.
They vinify the varieties separately, using natural techniques without additives, preserving the pure expression of each grape. Fermentation is carried out at 15°C with indigenous yeasts, which allows for the development of a complex and genuine aromatic profile. Aged for 9 months in stainless steel tanks with frequent battonnage of fine lees, followed by cold stabilisation at -4°C and an additional two months of bottle ageing before release.
Observador Tasting Notes
Appearance: Pale colour with greenish reflections, bright and clean.
Nose: A charming bouquet intermixing floral and fruity notes, with a background of distinctive mineral freshness.
Palate: On the palate, "Observador" seduces with its delicacy and balance, offering an amalgam of flavours that blend tradition and modernity. The texture is silky and the finish is long and refreshing.
