Description
Dom Pérignon is made only from grapes harvested in the same year, maintaining an absolute commitment to the vintage. For each selected year, a limited number of bottles are set aside to age for an extended period. During this additional maturation stage, the activity inside the bottle continues to evolve: the yeasts transfer their vitality to the wine.
Dom Pérignon thus reaches its maximum expression, known as Plénitude 2, which represents the second life of Dom Pérignon. During this phase, it manifests itself in all its dimensions, acquiring greater fullness, depth and intensity. Its ageing capacity is extended. The 2004 wine year will go down in the history of Dom Pérignon because of its accessible and generous character.
This year in particular stands out for being almost perfect, with no setbacks or excesses, the seasons flowing smoothly and naturally. After a cool month of August followed by a few weeks of dry heat, the harvest is in full swing. With a reserve of energy inherited from the previous year, the vines unfold their best potential and express themselves fully, giving rise to a generous harvest that begins on 24 September.
Tasting notes for Dom Perignon Vintage P2 Plenitude 2004
NOSE: Although the 2004 vintage shows a certain discretion in its bouquet, this aspect is presented with greater clarity in this later stage of the wine. Hints of pink grapefruit and blood orange finally give way to notes of fig. The extended ageing period on the lees reveals the characteristic minerality of the vintage, accompanied by Dom Pérignon's distinctive maturity, with hints of cocoa, mocha, toasted tones, brioche and honey.
PALATE: The wine's character evolves in a dance between tension and lightness, exhibiting tactile precision and meticulous refinement. The whole experience lingers, delicate, subtle and genuine, culminating in a subtle hint of liquorice.
