Description
Don Zoilo Fino is a sherry wine produced by Williams & Humbert with the Palomino variety.
First yolk musts from their best vineyards, cold static decanting and fermentation at 22ºC. The deslío is early, classification by fineness, fortification at 15º with the best wine distillates to obtain the traditional sobretablas.
A dynamic ageing process takes place, the classic Jerez Criaderas and Soleras, where biological ageing takes place under the veil of flor in the traditional oak casks, for an average minimum of 8 years and while it goes through the criaderas until it reaches the solera, from where the "saca" is made for consumption.
A fine wine, highly aged, "pasada" or "amantillándose" in a natural way.
Don Zoilo Fino Tasting Notes
Wine of golden colour, old gold, very bright. Pungent, intense and complex aroma reminiscent of "flor", almond notes. Very dry, fair acidity, full-bodied and very elegant character in the mouth, with great persistence in the finish. A tremendously expressive wine that will not be forgotten.
