Description
Wine made exclusively from a careful selection of Verdejo grapes from our Fuente de los Vaqueros estate in La Seca. The soil is poor with a surface of pebbles and a clay and limestone subsoil, which favours the natural ventilation and drainage of the vineyards, giving the wine exceptional organoleptic characteristics.
The climate is continental with very cold winters, rain during spring and autumn and summers with very high daytime temperatures and decreases of up to 20ºC during the night.
Harvesting is done mechanically and at night to maintain the temperature. Fermentation takes place in French oak barrels, remaining in the same for a period of six months. Then it goes to the bottle where it remains at least another 12 months.
TASTING NOTE OF JAVIER SANZ FERMENTED IN BARREL:
Golden yellow colour with golden edges. Elegant on the nose. Aromas of hay, ripe fruit, flowers and dry earth. A well integrated barrel, with a hint of fruit reminiscent of peach, nectarine and dried apricot. In the mouth it is wide, tasty, greasy where the minerals, the barrel and a small rest of residual sugar appear well marked in the palate leaving a very pleasant passage in mouth. Herbaceous notes, refreshing with citrus tips and marine memories. Very persistent.
SERVICE RECOMMENDATIONS:
Serve in a bowl with ice to accompany seafood, rice sailors, grilled and baked fish, smoked fish, foie gras, fresh cheese, tortillas...
