Description
Matsu The old is a selection of centennial vineyards of very low production, cultivated using biodynamic techniques.
Manual harvest that takes place during the first fortnight of October.
Fermentation and maceration preparation for 3 weeks in concrete tanks of 15,000 kg. Malolactic fermentation is carried out in new French oak casks, as well as 16-month ageing. This wine has not been filtered and clarified without using aggressive procedures.
Tasting note by Matsu El Viejo
Matsu the Elder:
Deep Cherry red Color, High layer, with violaceous notes on the edge.
Great aromatic intensity, with aromas of ripe black fruits, well integrated with the toasted, spices and smoked notes of the cask.
In the mouth it is stout and fleshy with very ripe and round tannins that make it greedy. The aftertaste is long and persistent, the ripe fruit notes are again very well assembled with the roasted of the wood.
