Description

Dazantes Añejo mezcal is an exceptional expression of artisanal mezcal, distilled in Oaxaca, Mexico, a region known for its rich tradition of mezcal production. This distillate is made from carefully selected Espadín agave, carefully selected and cooked in conical stone ovens, which gives it a distinctive smoky character. The agave used for Dazantes Añejo is slowly cooked in these wood-fired ovens, imparting deep, complex smoky notes to the mezcal. After cooking, the agave is crushed, usually using a horse-drawn stone mill, before fermenting in open wooden vats using yeasts native to the environment.

This traditional practice ensures a unique and authentic flavor profile. Distillation is carried out in copper stills, which purify the liquid and give it an impressive clarity. Once distilled, Dazantes Añejo mezcal is aged in oak barrels for a period that can vary, but is generally several years. This aging process softens the sharp character of the fresh mezcal and imparts rich notes of vanilla, caramel and spice, complementing its inherent smoky complexity. This mezcal is ideal to be enjoyed on its own or with a good Oaxacan meal, allowing you to appreciate all the subtleties of its rich composition. Dazantes Añejo is not only a drink, but a celebration of Oaxaca's mezcal heritage and art.

Tasting notes: Danzantes Añejo Mezcal

Appearance: The mezcal presents a deep and attractive golden amber color, with bright reflections that suggest its time in barrel and promise a richness of flavors.

Nose: As the nose approaches the glass, the mezcal displays a complex aromatic array. The primary notes are intensely smoky, characteristic of agave cooked in stone ovens. These smoky aromas are complemented by hints of oak, where subtle notes of vanilla and a light touch of dried fruits such as figs and dates emerge, providing a sweet counterpoint to the dominant smokiness.

Palate: On the palate, Dazantes Añejo is robust and full of character. The entry is smooth, with an almost oily texture coating the palate. The smokiness remains prominent, but is balanced with caramel and vanilla sweetness from the oak. The layers of flavor develop with notes of spice such as cinnamon and a slight hint of black pepper, adding complexity. Hints of leather and an earthy background can also be detected, reinforcing its handcrafted profile.

Finish: The finish is lingering and warm, with a persistence of smokiness and spice that invites slow enjoyment. The aftertaste leaves a lasting impression of wood and a faint memory of dried fruits, ensuring that each sip is memorable.
