Description
Ninja de las Uvas Tinto is a red wine made from Grenache in the D.O. Bullas by the La del Terreno winery.
The La del Terreno winery is located in the Sierra de Lavia Regional Park, in the province of Murcia. This personal project belongs to a young entrepreneur who, after combining her studies as an agronomist with her dedication to the cello in Germany, discovered her passion for wine production. After gaining experience in various wineries such as Josef Biffar (Germany), Vega Sicilia (Spain) and O.Fournier (Argentina), she decided to establish her own winery with a focus on energy sustainability. The modest, modular construction is the work of Julia Casado, also known as "la del Terreno", who has managed to stand out by making natural, organic wines with a distinctive character.
La del Terreno Ninja de las Uvas wine is made with grapes from 20-year-old vines planted in clay and calcareous gravel soils at an altitude of 750 metres above sea level. These small plots are cultivated in a traditional manner and without the use of agrochemicals, following ecological and organic farming practices that involve manual labour and harvesting in 15 kg boxes.
At the winery, 90% of the grapes from La del Terreno Ninja de las Uvas are destemmed. After a gentle crushing, maceration is carried out for 15 days, followed by spontaneous fermentation with indigenous yeasts in stainless steel tanks, with 2 or 3 pumping-overs. Subsequently, spontaneous malolactic fermentation takes place in used 500-litre barrels, and the wine is aged for 12 months. Finally, it is bottled unfiltered, unclarified and without the addition of sulphites.
