Description
Ossian Vides y Vinos is a winery founded by Javier Zaccagnini and Ismael Gonzalo, when in 2005 they produced a differentiated aging white, trying to recover and not lose the essence of the Verdejo variety from some unique pre-phylloxera vineyards of between one hundred and two hundred years.
Ossian Vides y Vinos work the 9 hectares of vineyards in an organic way, officially certified since 2001, it is the oldest organic vineyard registered and certified in the Rueda Designation of Origin.
The process of creating Ossian white wines is complemented by a careful and peculiar production system, always seeking respect for the raw material, placing emphasis on each and every one of the processes in search of the highest quality, attributing to these wines a singular differentiation.
Ossian Capitel is a wine made with 100% Verdejo from pre-phylloxera vineyards planted on sandy soils and slate outcrops, at an altitude of 900 meters.
The harvest is manual in 15 kg boxes with grape selection at the selection table. The unstemmed grapes are pressed in a manual vertical press, then fermentation begins in French oak barrels, 50% new and 50% of a wine, where it remains without racking for 10 months on its lees with periodic battonages.
