Description
Pago de Carraovejas Cuesta de las Liebres is a red wine from the Ribera del Duero denomination of origin, elaborated by Pago de Carraovejas.
The power of a unique plot The Cuesta de las Liebres vineyard sits on a steep slope with a rich biodiversity. The vines, planted in vertical vines, border on the upper part with a pine forest in which various native species of flora and fauna coexist. The whitish calcareous salts are found in a terroir of limestone marl. The slope, which is in the highest part of the valley, exceeds 30% of level in some sections. This slope, together with the unique training system, allows all the vines to be exposed to the sun equally. A unique vineyard planted in 1993. The result of the obstinacy of extreme viticulture.
The character of a small redoubt The Cuesta de las Liebres grapes were harvested by hand after exhaustive monitoring during their ripening cycle. The grapes were sorted in the vineyard and transported in small boxes to the winery, where they went through a cold chamber and double sorting table: first by cluster and then by berry. The must was moved by gravity in small vats. The alcoholic and malolactic fermentations were carried out spontaneously in small wooden vats to mark the personality of the terroir. The wine was aged for 24 months in new 225-liter French oak barrels of extra-fine grain.
