Description
Pago de los Capellanes The Walnut is a red wine of the D.O.C. Ribera del Duero elaborated BY Bodega Pago de los Capellanes. Wine made from the grape from a plot called the Walnut. After a thorough follow-up of this plot, it is decided to harvest and elaborate independently from the rest of the wines of the winery. In order to obtain the maximum aromatic intensity, a pre-fermentation maceration is carried out at low temperature (14 º C) for six days.
Malolactic fermentation develops slowly and relodged without the addition of bacteria, at 22 º C for 20 days in new French oak casks. Later, the wine rests 22 months in new French oak barrels of selected grain, passing by 4 different types of oak.
Once this period of ageing is finished in wood, it is bottled without passing through cold, neither clarifying, nor filtering.

Pago de los Capellanes The Walnut presents in view an intense purple cardinals, with garnet edges. Typical closed coat of fine red grape, dense and abundant tear.
The aromas of flowers and fresh fruits fill our senses, later appearing the shades of vanilla, cocoa, roasted, new leather, which confirm the good assembly of the wood with the grape. Shades of sandalwood and spices, as well as snuff or licorice leave a pleasant and persistent memory.
The entrance into the mouth is elegant, fleshy, refreshing to the palate. The advance is powerful and complex and leaves us a long, intense aftertaste of very ripe grapes and round, noble tannins.
A serious and complex wine, which is presented now, but which has long life ahead of it.
