Description
Pago la Jara is a red wine produced by the Compañía de Vinos Telmo Rodríguez winery in the D.O. Toro.
Compañía de Vinos Telmo Rodríguez was born from the union of two oenologists, Pablo Eguzkiza and Telmo Rodríguez, with extensive experience in Bordeaux and La Rioja.
This "company" produces wines in different Spanish designations of origin (Malaga, Alicante, Rioja, Rueda, Ribera del Duero, Toro...). In all the areas in which it produces wine, the winery always tries to use native varieties from each region.
Pago la Jara is made up of five extraordinary plots covering an area of 4 hectares of vineyards. Most of the vines are of the "Tinta de Toro" variety, recognisable by its small clusters, and some "Albillo Mayor" is also included.
The grapes undergo fermentation using indigenous yeasts in wooden vats of 3,000 kilos. Subsequently, the wine matures gently for a period of 15 to 18 months in 225-litre oak barrels and 1,500-litre foudres.
