Pascal Cotat Les Monts Damnes is a wine made from Sauvignon Blanc in the Sancerre region by Pascal Cotat.

This exceptional wine comes from the highest parcels in Les Monts Damnés, so called because of the imposing and steep nature of its slopes, which makes harvesting here a heroic task.

The terrain in this area is composed of "terres blanches": soils rich in fossils and silex, where calcareous and clayey components predominate. This area is considered one of the best places in the world to grow Sauvignon Blanc.

Pascal Cotat takes a unique approach to winemaking. He harvests the grapes later than usual, pushing ripeness to the extreme. Harvesting is done by hand, following the principles of organic and biodynamic agriculture, without the use of pesticides.

Pascal Cotat's winemaking process follows the lunar cycle. Fermentation is carried out with indigenous yeasts and the wine ages in large barrels known as demi-muids. No filtration process is performed on his wines.

Pascal Cotat Les Monts Damnés is a dry white wine that displays notes of candied citrus, mango and passion fruit in its fragrance, as well as a touch of honeysuckle flowers. These aromas intertwine with nuances that evoke the sweetness of ripe apples, the juicy flavor of peaches and the freshness of wild herbs.

It also presents subtle fragrances of almond and lemon. It is a wine that requires patience, as over the years it will unfold and reveal an amazing aging process that will provide satisfaction for more than a decade.
