Description

Pazo San Mauro Albariño is a wine with denomination of origin Rías Baixas, Albariño grape variety. It is made only with its own vineyards.

The freshness and aromatic intensity of the Albariño from this historic pazo dating back to 1591 are fully manifested in this 100% Albariño wine. This wine is the expression of an exceptional vineyard rooted in the history of a pazo that has its roots in the 16th century.

The vineyards of the Pazo de San Mauro extend over a 30-hectare estate on terraces of boulders and granite subsoil that slopes down to the banks of the Miño River. The soil, with sandy characteristics on the banks of the Miño and pebbles on the slopes and higher areas, provides ideal conditions for the cultivation of this native variety. The grapes are harvested by hand, carefully selecting the best grapes in the vineyard itself for the production of our wines.

Depending on the ripeness and phenolic state, the grapes are vinified in three different ways, seeking to obtain maximum expressiveness and complexity: one part is destemmed and then macerated at low temperature (11ºC) to achieve a greater extraction of aromas and other compounds that provide structure to the wine. Another part is vinified with whole bunches, including the well-lignified stems, which contributes freshness and identity to the wine, with more varietal flavours and a more complex nose. The third part is vinified directly after destemming to preserve all the acidity of the grapes, giving the wine freshness in the mouth.

Tasting notes of Pazo San Mauro Albariño

Very high aromatic intensity, with great quality in its aromas. Nose with fruity notes and hints of citrus, fruits and white flowers. In the mouth it is a very varietal wine, with a wide entrance where its freshness, balance and persistence stand out.
