Description
The attributes of Protos Verdejo have made this white wine without barrel one of the best valued by the consumer.
Vineyards planted more than 15 years ago. Dry with gravelly soils. Altitude between 700 and 800mts s.n.m. Yields of 7,500kg/ha.
Mechanical harvest at night. Maceration during 4/5 hours at 10ºC. Pressing in an inert atmosphere and static debourbage at 10ºC. Controlled fermentation at 13,5ºC. Ageing on the lees for approximately 3 months (decided by tasting tank by tank).
Colour: Straw yellow with greenish hues that indicate youth. Very clean and bright.
Nose: Medium-high intensity and complex aroma. Fresh tropical fruits such as pineapple and citrus aromas stand out, together with white fruit (apple), and herbaceous (boxwood and fennel), typical of the Verdejo variety.
Palate: Dry wine, with an entry that surprises for joining the freshness and moderate and balanced natural acidity with the roundness, body and structure that contributes the raising on fine lees. Slightly bitter, characteristic of the Verdejo and with a long persistence that leaves a pleasant memory of the wine in the mouth.
