Description

Kikusakari Daiginjo Sake 720ml is a refined and exquisite expression of one of the highest grades of sake. This sake is brewed following the strict rules of the Daiginjo style, which requires the rice to be polished to remove at least 50% of its original grain, focusing on the purest, starch-rich core. This level of polishing helps to create a sake with a cleaner, lighter and more aromatic flavor profile. Kikusakari Daiginjo Sake is produced in small batches to ensure maximum attention to detail and quality. The selected rice is carefully polished and then fermented at low temperatures to preserve and enhance the delicate and subtle flavors. Slow and controlled fermentation is crucial to develop the floral and fruity notes characteristic of Daiginjo sakes.

Tasting notes: Sake Kikusakari Daiginjo

Appearance: This sake presents a clear and bright pale yellow color, almost transparent, demonstrating its purity and fine filtration. Viscosity is noticeable, indicating a smooth texture that is anticipated on the palate.

Nose: On the nose, Kikusakari Daiginjo Sake is exceptionally aromatic and complex. Elegant notes of ripe fruits emerge, such as pear and white melon, accompanied by a light floral nuance, reminiscent of white flowers and a subtle hint of anise. Palate: Upon tasting, the silky texture is immediately apparent. The flavors are consistent with the perceived aromas, with delicate sweetness balanced by refined acidity. The fruit notes are vibrant, with white melon standing out, followed by a sweetness reminiscent of pear nectar. There is a gently spicy background that adds depth without overwhelming the overall lightness of the sake.
