Description
San Román Garnacha is a red wine made from red Grenache in the D.O. Toro by the Maurodos winery.
San Román Garnacha is the most recent addition to the wine range of the winery run by Mariano García, following the inclusion of Grenache as a grape for the production of single varietal wines by the appellation of origin (DO) Toro. San Román grapes are sourced exclusively from a specific plot called Pago de los Almendros, which is an old vineyard of 1.4 hectares planted in 1964, located in the region of El Monte, in the municipality of Villaester, at an altitude of 710 metres above sea level. In this area, the soils are loose, stony or sandy, with clay subsoils that retain water, providing relief for the vines during hot summers and periods of drought, with annual rainfall ranging from 200 to 400 millimetres. These plots are part of a total of 130 hectares of organic vineyards that are currently in the process of conversion to biodynamic methods.
The harvest of San Román Garnacha is carried out manually, with an initial selection of bunches in the vineyard. Afterwards, the bunches are placed in 15-kilogram boxes and placed in a cold room to cool them and prepare them for the next stage of selection on a table, where the best berries are once again selected. Next, the San Román Grenache flows by gravity into different containers, where the whole bunches begin spontaneous fermentation with indigenous yeasts, while the skins are gently crushed by hand. After that, the wine is transferred to 500-litre French and American oak barrels, with 30% of them being new barrels, where it will age for 20 months.

This is a dense and flavoursome red wine, which displays floral and red fruit fragrances. On the palate, its freshness and smooth texture intertwine, with agile and delicate tannins that, despite its robustness, are not overwhelming. In short, this is a highly unique and distinctive red wine.
