Description
Shannon Rock'n'Rolla Pinot Noir is a red wine made from Pinot Noir by Shannon Vineyards Winery under the Elgin Valley Appellation in South Africa.
A single vineyard wine from the oldest Pinot Noir vineyard on the estate. The Pinot Noir bunches are cooled to 3ºC before being sorted on a conveyor and destemmed. The berries are then hand sorted before cold maceration takes place for 3 to 6 days at 8ºC. Slow-fermenting wild yeasts are used for fermentation. Fermentation temperatures range between 26 and 30ºC. After pressing, the wine is racked and left to complete its malolactic fermentation and maturation in oak barrels.
