Verdejo
Description
Spanish White Guerrilla Verdejo is elaborated with grapes of the Verdejo variety (100%). It is considered that this variety is originally from the Rueda denomination of origin, implanted there by the Mozarabs. It is a rather rustic variety, resistant to drought, with a thick and sturdy skin, this makes it less sensitive than other white varieties to different diseases. The result in Riojan soil is a fresh, tasty and glyceric wine.
The grapes come from a young vineyard, run in high trellis and planted with a high density of 3600 plants per hectare, on a calcareous clay soil. The harvest takes place in mid-September, performed at night, between 1:00 AM and 9:00 AM, to look for the freshest temperatures of the day and preserve the grape from oxidation.
Fermented in stainless steel tank of 10000 liters of capacity at low temperature around 11 degrees centigrade. After fermentation it was kept in stainless steel tank in ageing over fine lees for 2 months.
